Good morning from the farm!
We can not believe it is already the second week in July. Time seems to be flying. This week, our focus on the farm is our annual Garlic Harvest. You saw the first garlic make an appearance in the box last week, and it will be in there again this week. The thing about garlic that is different from most of the other crops we grow, is that once it is done growing and ready to be harvested, it needs to come out of the ground. If it sits in the ground too long, or we get some wet weather, it could lead to rot and major crop loss. So, this week our farm crew will be pulling tens of thousands of heads of garlic out of our fields. We have a feeling it is going to be one of our best garlic harvests to date ;)
After the garlic is out of the fields, it must be cured. We’ll get it all spread out on pallets, a bit off the ground for good air circulation, while we sort by size and prepare to hang. Once it is sorted, we will hang in bundles of 10 to dry. We’ve got our eyes on our third greenhouse as the garlic curing space for this year. As the garlic cures, the skin will become flaky and it will look more like the garlic you are used to buying from the store. Though difficult to peel now, the fresh garlic gracing your box this week and last, will be short lived - so enjoy it while you can!
It's a good week for the Allium Family in this week's box, as our first Onions of the season have arrived! We've reached that point in summer where new crops are arriving each week, and there is a ton of new stuff to look forward to! Check out the 5 new items for this week....
