Join Mill House's Executive Chef Carolyn Stec and General Manager J Silhan in front of the Amber Waves Farm pizza oven! Carolyn and J will be showing us how to bake Galettes, a rustic, free-form tart made with a single crust of pastry or bread dough, similar to a pizza. Each attendee will mold and bake their own Galette during the workshop. Participants will be able to choose their filling (sweet or savory) prepared ahead of time with Amber Waves vegetables and Briermere Farm’s fruit. Additionally, we’ll have the opportunity to tour and harvest for our Galettes in the Amber Waves herb garden— a perfect place for culinary inspiration.
Carolyn and J will talk about what kinds of flour they prefer to use for different baking recipes, and Laura Rose of AWF will talk about wheat production and give a short milling demonstration.
Galettes are a great dish for both beginner and experienced bakers. We hope bakers of all levels will join us, including kids! The Children's Museum of the East End (CMEE) will be hosting the child component of the workshop. Children will prepare ingredients and bake their own small pie. Ages 3-12 are welcome!

Carolyn and J have been working together at the Mill House Inn for 5 years. They’re also in the process of starting a new community kitchen, A Kitchen 4 Liam, at Scoville Hall in Amagansett. Their mission is to help local farmers & artisans succeed with all that is special about the east end, and through these efforts educate and grow the minds and palettes of our community with a focus on the youth.
