Copper Oven Dinner: Paula Segura Mallmann & Emiliano Cordeiro of De la Ribera Catering & Cruz del Sur Farm

Last season, Paula and Emi treated our crew to an asado in the field, the barbecue style found in Argentina and Uruguay. It was an unforgettable experience and meal, so much so that we just felt we couldn't keep them to ourselves!

Grab your seat at the table for an asado in the field for our first Copper Oven Dinner of the 2016 season by amazing chefs and fellow farmers Paula Segura Mallmann and Emiliano Francisco Cordeiro! They'll be cooking up beef from local Mecox Bay Dairy along with plenty of other delicious dishes straight from Amber Waves's fields and other friends of the farm. To wash it all down, we'll be pouring wines from Channing Daughters Winery and brews from Montauk Brewing Company.

2015 marked the inaugural year for Amber Waves Farm's Copper Oven Farm-to-Table Series, named after our copper wood-fired oven custom-built from Maine Wood Heat. This summer, we are hosting a rotating line-up of our chef friends from near and far for a series of brunches and dinners not to be missed! Copper Oven meals are family-style feasts, served on our rustic handmade tables lining our beautiful field in Amagansett. Guests take a seat at the table surrounded by our herb garden + organic flowers and vegetables. Every brunch and dinner features produce straight from our fields along with seasonal ingredients sourced from other local East End farmers, fishermen, and purveyors. Guests start off with a drink in our herb garden from Montauk Brewing Company and Channing Daughters Winery and have the opportunity to take a field walk with one of our farmers before they sit down to a communal meal inspired by all the East End's land and sea has to offer!

Proceeds from our Copper Oven Series helps to support Amber Waves Farm's educational programming, which grows young farmers through our seasonal apprenticeships, and connects eaters, especially children, to their food and the farmers who grow it.


Paula Segura, 35 years old, runs Cruz del Sur, an organic farm located in José Ignacio, Uruguay and also works as a private chef and caters for special events. She grew up surrounded by nature, art and good food and therefore developed a passion for hospitality.

Paula has worked in the food industry since she was sixteen with well known chefs in Argentina such as Francis Mallmann, Pablo Massey and Dolli Irigoyen as a chef, restaurant manager, advisor, food stylist and tv show producer.

She lives in Jose Ignacio and specially enjoys being in contact with nature, writing poems and practicing Ashtanga Yoga. Challenging projects are her favourite ones.

Emiliano Cordeiro, wine sommelier and food lover now runs his own organic farm in José Ignacio, Cruz del Sur. Together with his partner he also provides private chef and concierge services at De la Ribera in Uruguay.

He has worked for fifteen years as a sommelier, maître d and food educator for Francis Mallmann, Vik retreats, Pablo Massey, Sucre restaurant, Gran Bar Danzón and Osaka among others.

Emiliano nowadays lives in Jose Ignacio, he loves nature and the quite life in the countryside which allows him to focus in his other passion: music.
